A delicate fold. A golden base. Small dumplings, full of character.

Gyoza — Japan

The signature is the contrast: a crisp underside, a soft wrapper and a juicy filling.

What you need

  • Dumpling wrappers
  • Finely chopped cabbage
  • Minced pork or a vegetable filling
  • Ginger, garlic and spring onion

In the kitchen

  1. Mix the filling and keep it chilled. Place a small spoonful in each wrapper.
  2. Moisten the edge, fold and pleat, sealing the filling inside.
  3. Sear the bases in a lightly oiled pan. Add a little water and cover to steam until the filling is fully cooked.
  4. Remove the lid and let the water evaporate, restoring the crisp base.
